Can you advise if I can pay people cash in hand if it’s below having to take NI & tax off plus can I include that in my own return as an expense as it’s come out of my own business account

If you are employing staff, you must tell HM Revenue and Customs by registering as an employer - you can do this up to 4 weeks before you pay your new staff. This is regardless of the amount they will earn. More information can be found here:
